Pengkang

Pengkang is a banana-leaf parcel of sticky rice with dried shrimp, finished over embers. Try it as a savoury snack during a Pontianak visit, while remembering that its food tradition also extends along the coast towards Mempawah.

Inside the parcel

The filling is ebi: small dried shrimp that give the rice its savoury character. Coconut milk enriches the rice, while the banana leaf protects it during cooking. Unwrap it slowly and notice the difference between the firmer outside and the soft, sticky centre. The wrapper is part of preparation and presentation, not something to eat.

What grilling adds

The triangular packets are held between bamboo strips over the fire. Grilling gives the leaf its smoky aroma and changes the surface of the rice without turning the dish into a dry cracker. A freshly finished parcel is a useful starting point for tasting it. Ask the seller which batch has just come off the heat.

With sambal kepah

Pengkang is often accompanied by sambal kepah, a chilli condiment containing clams. Taste the rice first, then add a little sambal so that the two flavours remain distinct. Ask whether the sauce is included in the order. Both shrimp in the filling and shellfish in the condiment matter when discussing dietary restrictions with the seller.

Pontianak and the wider coast

National tourism information includes pengkang among foods associated with Pontianak. The Mempawah tourism service documents Pondok Pengkang in Peniti Luar. That is a separate destination outside Kota Pontianak, not a city-centre stall. If visiting a particular producer is important, check the exact address before organising transport rather than following the dish's broad regional label.

A simple tasting stop

Choose a small portion before ordering more, especially if other dishes are planned. Allow the hot parcel to cool enough to handle. For takeaway, ask the maker about storage and eating it the same day; do not assume a leaf wrapping makes it shelf-stable. A brief conversation about the filling and grilling can make this modest snack one of the more memorable pauses in a city day.
