How the plant grows

Torch ginger forms tall leafy shoots from underground rhizomes. Its spectacular pink or red flower heads rise separately from the foliage on their own stalks. The coloured overlapping bracts surround smaller true flowers. Native to a wider Southeast Asian range including Borneo, it grows in moist forest margins and gardens rather than being an orchid or a palm.

Edible parts, flavour & texture

Young inflorescences provide a fresh aromatic ingredient for salads and seasonings. Mature showy heads are also grown as cut flowers, but the kitchen commonly uses younger material. Flowers attract nectar-feeding birds and insects. Tuhau is a different Etlingera whose young shoots supply another flavour; sharing a genus does not make their used parts interchangeable.
