What is Nasi subut?
This is a mixed staple rather than plain rice coloured for decoration. Corn and purple sweet potato are part of the food itself, giving the grains a different colour, bite and flavour. Indonesia’s tourism account places nasi subut particularly in Tana Tidung, within North Kalimantan.
The mixture can be recognised by its purple tone, but the amount and cut of the ingredients change the appearance. The name describes the preparation more usefully than expecting every portion to match one photograph.
Flavour and texture
A little sweetness from the vegetables sits beside the savoury rice base. Corn adds a separate bite and the sweet potato softens the mixture. It is a main starch to accompany a meal, not automatically a sweet dessert.
Taste it before adding a strong sauce to notice those differences from plain white rice. The side dishes then supply the larger contrast; their seasoning will influence the overall heat and saltiness.

The official food description mentions stingray satay as an accompaniment and places nasi subut in markets and local eating places in North Kalimantan. Availability depends on the actual seller; a regional food guide is not a current menu. Ask what is being served with it.
Compare it with Adan rice from Krayan, where highland rice varieties and farming heritage are the main story. Both broaden the idea of rice in North Kalimantan, but one is a mixed preparation and the other a named rice-growing tradition.
